BILBERRY-FILLED ENERGY BARS
- Remove the date seeds.
- Measure all ingredients into a blender. Mix to an even mixture. The more effective the mixer, the better. If the ingredients do not mix well, stir the mixture a with a spoon.
- Place the mixture in a flat dish, for example a baking dish. Press to an even, approx. 2 cm (one inch) thick sheet.
- Melt the coconut manna in a saucepan until smooth. Pour it as a thin stream evenly over the mixture.
- Let the mixture harden in the fridge for a couple of hours.
- Use a sharp knife to cut bars.
- Store the energy bars in a closed container in fridge.

- 300 g (10.5 oz) fresh dates
- 1 bag i.e. 50 g Biokia’s dried organic bilberries
- 100 g (3.5 oz) almond flour
- 100 g (3.5 oz) nut mix
- 1 dl (1/2 cup) oat flakes
- 3 tbsp Biokia’s organic bilberry powder
- 1 tsp vanilla powder
- 2 tsp cardamom
FROSTING
- 2 dl (1 cup) coconut manna
