An energy bar is an easy and versatile snack that rescues you in busy mornings or helps with your sugar cravings in the afternoon. A home-made energy bar is a nutritious and delicious alternative that beats processed protein with flying colours. Wrap the energy bar to go and enjoy a smart snack!

These bars taste of Finnish bilberries, cardamom and dates. Oats, nuts and almond flour bring the texture to the bars. Grab an energy bar if you’re heading to the gym from work or if you want a snack to take with to your weekend trip.

  • 2 dl (1 cup) coconut manna

BILBERRY-FILLED ENERGY BARS

  1. Remove the date seeds.
  2. Measure all ingredients into a blender. Mix to an even mixture. The more effective the mixer, the better. If the ingredients do not mix well, stir the mixture a with a spoon.
  3. Place the mixture in a flat dish, for example a baking dish. Press to an even, approx. 2 cm (one inch) thick sheet.
  4. Melt the coconut manna in a saucepan until smooth. Pour it as a thin stream evenly over the mixture.
  5. Let the mixture harden in the fridge for a couple of hours.
  6. Use a sharp knife to cut bars.
  7. Store the energy bars in a closed container in fridge.
